It is simple..mass gaining are exercises which provide you the pump to grow...whereas muscle defining are exercises which give you cuts - they define the muscles of your body...mass gaining exercises are due to heavy weight training whereas muscle defining are done with lighter weights !!! Go Hard...

For mass gaining, I think it is just growing more muscles. So, you become stronger and bulkier. For muscle defining, it is more the toning - to make yourself look better... and sexier. Basically for the first, just increase the weight you lift to gain more muscles. As for the latter, reduce the weight you lift (don't do the maximum) and instead lift "little" but more repetition.

Mass gaining routines allows you to pack on those muscles depending on what body part you are targetting. Muscle defining routines on the other hand allows you to make the cuts more prominent. It rips your body to show the distinction between each different muscle groups.
