Summer Soup

Does anybody have a good summer soup recipie? I've always seen them, but have nver made them. I'd like to try.

How about this one? Chilled Cantaloupe Soup INGREDIENTS * 1 cantaloupe - peeled, seeded and cubed * 2 cups orange juice * 1 tablespoon fresh lime juice * 1/4 teaspoon ground cinnamon DIRECTIONS 1. Peel, seed, and cube the cantaloupe. 2. Place cantaloupe and 1/2 cup orange juice in a blender or food processor; cover, and process until smooth. Transfer to large bowl. Stir in lime juice, cinnamon, and remaining orange juice. Cover, and refrigerate for at least one hour. Garnish with mint if desired.

How about a nice cold soup like minestrone? I don't have a good recipe for it though. I really want to learn how to make good soups. I am lazy and typically go for canned soups even though I really don't like most of them.

I think they should market some cold soups for the summertime. I'm sure there must be some way to preserve them.

An in-season veggie soup is great and easy. Simply start with a base of water, a can of tomato paste and then chop up whatever fresh veggies you can find ripe in the garden. Season with garlic, onion, basil. Cook on a slow cook or in a slowcooker/crockpot all day long and serve with a grilled bread!
