What are your favorite cheeses to cook with?

My family loves cheese (me, not so much). I get bored just using the regular cheddar cheese in dishes. I've begun using other cheeses in dishes just to try them out. I've discovered that Blue Cheese is great in salads and on hamburgers. And Smoked Gouda is spectacular in macaroni and cheese. I want to try other types of cheese as well. So, what cheeses have you found that work well in your cooking? What dishes do you cook them in?

Hi there. I like to cook with alot of tasty cheddar cheese, parmesan and brie, especially in panini bread, or huge sandwiches, pastas, toppings and sauces. Have a great day...

I love cheese of just about any kind. Goat cheese in salads is great. I use grated cheddar on broccoli and cauliflower as well as macaroni and spaghetti. I sometimes make "Reuben" sandwiches with dark rye bread, pastrami or corned beef, sauerkraut and swiss cheese.

My husband is the cook in our family, and he makes a completely fabulous sauce, which is a white sauce for pasta, flavoured with Danish esrom cheese, instead of cheddar or something more traditional. It's absolutely wonderful.
