Low or Lower Carb cooking....do you have any good recipes?

My mother is a beef and potatoes kind of girl, but I tend to avoid the potatoes more than I used to. We're both diabetic, but mine is worse than hers. But, since I am cooking for her and, at 91, she is not going to change her ways in any drastic way, I was hoping for some ideas. Does anyone have any recipes or recipe links for foods that are reminiscent of comfort foods or "home cooking" types of meals that I can at least reduce our carb intake while not forcing a major change on my mother? She is polite about some things I make, but I can tell when she's not very happy about my choice of meal. So, I don't have those kinds of things as often as we probably should. Any ideas??

The South Beach diet has some great recipies that might be sueful to you. they also have idea on how to cut carbs, but not really feel like you are doing so. For example, I make chicken fingers using almond meal (ground up almonds), they are awesome, and I can still feel like I am having a treat, without all that breading. I would also suggest chili, throw in some beans for added protien and fiber. Stews are also good, you can throw in some potatoes, but not many, You can limit yourself with them a little more than your mom might have to.

Thanks. We do chili every couple of months or so and I do have the South Beach diet book. I'll have to take another look at its recipes. I'm hoping to find some modified every day meals to see if I can lower our carbs without making Mom feel like her entire meal has been changed. Thanks again.

I make a "lazy girls" stuffed cabbage. Rather than stuffing the cabbage leaves, I cook everything together, more like a stew. I always use ground pork for this as I think it tastes better with the cabbage. Get a head of cabbage, and cut into shreads. Cook the ground pork in tomato sauce, and add spices (the spices you use for stuffed cabbage). Add cabbage and cook till the cabbage is soft. I think this is one of those dishes that is better the next day. We often eat it over brown rice, but your mom could have hers with potatos or noodles.
