Looking for Low Carb or Lower Carb recipe ideas...anyone?

My mother and I are diabetic. She is 91 and pretty set in her ways...definitely a beef and potatoes kind of gal. I've tried sneaking in things that are reduced carbs, but I am not always successful. One thing that went over well was Hot Chicken Bites made like Hot Wings. She loved them. But, does anyone have any meal or recipe ideas for lowering carbs for the "set in their ways" types? Something that would appear to be comfort food or traditional cooking, but really is better for them? I'd appreciate recipes or links to recipes, if you have them. Thanks!

I do know what you are going through. I live with my sister and she was recently put on insulin along with a very strict diet of no carbs what so ever and no fruit. Like your mother we are meat and potatoes types and going totally no carb is not easy. There are so many things with carbs in them and it makes it difficult to just cut them out completely. One thing I can suggest is to check your breads. some have lower carbs then others. We were surprised when the one loaf in our freezer was 25 grams of carbs per slice, we bought some new stuff which is only 13 grams. Big difference and no it's not the thin sliced. We have been having more salads, vegetables and sauerkraut. The last one makes a nice side when you are used to potatoes. Now one recipe you can try is to cook up cauliflower and then mash it up like potatoes. I have not tried this but supposedly it tastes like mashed potatoes when you add salt and butter. You could also do the same with some squashes, boil and mash them. If you don't have to get rid of carbs completely check out rice, like rice a roni they even have a website to help with recipes, or even egg noodles. They have lower carbs then other side dishes.
