Do you like eggplant (aubergines) or zucchini (courgettes)?

I just finished my leftover eggplant parmesan - it was sooo good. Sliced eggplant lightly breaded and fried and topped with spaghetti sauce and cheese. I also like eggplant fried by itself.
There is a Mediterranean dish I like that reminds me a bit of ratatouille - a blend of eggplant, zucchini, onions, peppers, tomatoes, in a spiced tomato sauce served with pilaf. A local Lebanese restaurant serves it - and it is wonderful!!
I like zucchini fried and in the Mediterranean dish, but I also like it in marinara sauce or regular spaghetti sauce. But, I love both vegetables grilled! I never thought I would, but there's just something about them being flame-kissed that does something to them I enjoy a lot. Oh, and grilled eggplant on pizza is pretty darned tasty, too.
Eggplant that is lightly breaded and fried and layered with spaghetti sauce, ricotta/cottage cheese mixed with egg and mozzarella cheese, and some parmesan cheese is a fabulous alternative to lasagna!
