Is there a way to add a new interest to the interest choices? Is there anything that you can do if you don't see an interest listed, and would like add it?

Yea,there is certainly a way.
Just type the interest you want to add.If the interest already exists,you would have joined that interest.
But,in case if the interest is not present,a new interest under the name you have give will be automatically formed.
So,you can add an interest if it is already not present.After you have created the interest you can add photos and start a discussion.
