You have to use WinRAR.exe to unzip the file. It open the iTune is because your .rar file doesn't has suitable software to open it, so iTunes is selected as the most possible software that can read it. It'll not happen once you install the WinRAR.exe.

.rar files are compressed files. you'll need an extraction program to open it. programs like WinZip (included in Windows XP), WinRAR (rarlabs.com), and other similar softwares.

Sounds to me like the .rar extension has been assinged to itunes on your PC. If it had not it would open WinRar or ask you to select a program to open it with. You (or someone else using your pc) must have selected itunes to open .rar files at some point. Not entirely sure how to unassign but it should be easy to do.
