What's your favorite vegetable and how do you prepare it?

I'm getting tired of vegetables made the same way every time, so I need some ideas. What is your favorite vegetable and how do you prepare it? One of my favorites is asparagus. I toss it with a bit of sesame oil, lemon juice, lemon pepper and garlic and then grill or broil it.

I too love asparagus and am very glad it's in season now. I soak it in Italian dressing and then grill it on the barbeque. It is so good that way. I also like green beans and will toss some slivered almonds and lemon juice in.

It's not my fav. you allready nailed that! LOL! But I like to peel a cucumber and thin slice it, then I'll thin slice 1/4 of an onion, I add salt pepper, a little vinegar, and 1/2 cup, or more, sour cream.Blend it all together, Put in the frig. and let the flavors blend for at least 4hrs. or overnight, and serve as a side dish or to compiment a meal It's great, a little heavy on the calories, but whos counting! I thought you were describing the way I do cucumbers... right up until the sour cream step. I use water instead and float the cucumbers in it with vinegar, salt, pepper and onion. I guess I'm doing the low-cal version of your tasty sounding dish. LOL

Hi spectrum42. I love all vegetables and it is so difficult to me to pick one of them. I like asparagus fried in butter, on soup, on salad and to stuffing pies. If you want a new idea to vegetables you may try the aubergine lazagna: you make your normal lazagna but change the pasta for slices of aubergine. Hope it help you. Cheers.

I'm currently enamored with eggplant. I cut it into strips, salt it and let it drain, before marinating it in a balsamic vinegar and savory herb concoction. After a day or two, I throw it onto the grill and use it as the 'meat' in my sandwiches. Yum! I also love the cool simplicity of cucumbers sliced paper thin and marinated in Italian dressing. An excellent snack or side for the summer.
