So I had some cucumbers left over and needed to do something with them no wasting in this house. So I decided to do sweet pickle spears just for something different. We plan on entering our canned goods into at least one fair this year so this will give us another entry. Hope they turn out good.

I have several canning books that I am pulling recipes out of. I also have been using my very favorite canning book that is older than I am. My grandmother gave my mom the book when my mom first started canning. I love that book. I love making pickles it is very satisfying seeing them done. My shelves in my pantry are filling up and I am sharing with friends also. I am going to be teaching a friend here in Florida how to can and I am teaching a friend in AR how to through emails. It is an art that is just not practiced enough anymore. I would love to see more people canning. With the economy the way it is it is a frugal thing to do.

Good Luck at the fair! When I first started pickling I saw a reciepe for dill pickles, I went and got the ingrediants and they called for 1/4 jalepeno pepper, as I was going along the peppers seemed small so I put in 1/2 of a pepper,LOL,big mistake they were so HOT! I gave them away as gifts to people who enjoyed them. I know this is off discussion,just thought I'd share that with ya! Thanks! tdemex

Thanks! Don't worry about being off subject sharing is great. Yes peppers can be really strong so you have to be real carefull with them. That is funny though. I have these peppers growing that are so freakin hot that I am just picking them and throwing them in a jar of vinegar that we will use in beans and greens. they are too hot to do anything else with.
