use fresh produce before it spoils

In our restaurant we use a lot of fresh tomatoes and vegetables and consequently we also had to throw a lot of them as you want to serve them fresh only. Now, we use all leftover tomatoes and vegetables of the day to make a very simple tomato soup. Use all vegetables except the tomatoes and prepare a vegetable broth. Once ready, blend, together with half the finely cut tomatoes and a touch of hot sauce. Make a roux from equal parts of flour and butter. Add the broth little by little. Add the other half of tomatoes, warm up, add pepper and it's ready to serve with some fresh cream and fresh herbs. You can freeze it with no noticeable loss in quality. If your don't have enough tomatoes, freeze part of the broth for future use. What's your way to make use of fresh produce before it spoils?

I am so glad to read you are doing this. I bet the soup tastes really good, especially with cream. You can also add fresh basil when blending and serve the tomato basil soup with a swirl of cream or sour cream, decorated with a couple of basil leaves. I try to use up all the fresh vegetables while fresh. If this is not possible I freeze them in freezer bags for another day or I make a big pot of vegetable broth using the veggies and discarding them when the broth is done. I either freeze the broth or make soups such as minestrone, black bean soup or vegetarian stew. I love cooking with vegetables.

I would dry my fresh products if I am not able to use it. I have food processor at home, it is simple way to dry your fruits and veggie for later use.
