sweet jilebi

take two cups of maida and a half cup of sour curd in a bowl and add 1 tsp of fruit salt. Mix thoroughly and add water if necessary. Make the dough of pouring consistence. take a bottle, make small hole in the cap with a heated nail. pour the batter in the bottle. In an other pan make sugar syrup, one string thick, ready to dip the jilebi rings. Take a flat bottomed pan pour oil to fry the jilebis.Pour the batter from the bottle in to the heated oil, in such a way they make ring after ring fry jilebis in oil. put the fried jilebis for 2 minutes in the sugar syrup and take out put in a serving plate.

Hi rama, you have made my mouth water. I simply love jalebis. But I thought we used a deep bottomed pan for it. Is a flat bottomed pan enough? I mean, you deep fry them, don't you? Cheers and happy mylotting

Thanks for the comments. It is flat bottommed because only then the rings come perfectly, and frying is ok with flat bottom also. Oil spread evenly, can fry more no. of jilebis.

Thanks a lot for the best response. :) I have never made jilebis, only eaten them. And I had always thought they used a deep-bottomed pan for it. :) But now that you have pointed it out, yeah.. I agree, the rings will come out beautifully in a flat bottomed pan. Can't wait to try this out. Cheers!
