I know a lady who makes soft cookies. She said she uses Crisco instead of butter. Maybe you could find a recipe that has Crisco in it instead of butter. I personally never wanted to eat Crisco, so I haven't made mine that way. Mine turn out hard too.

I reduce my sugars by 1/2 a cup both brown and white,-I also reduce my flour by 1/2 a cup.It is important to blend the butter eggs and sugar until they are fluffy, before stirring in the flour.salt and baking soda.I also reduce the cooking time to 8 minuets instead of 10-12. Always make sure your oven is preheated to 375*.Hope this helps. I haven't made a crispy cookie in years.Even my corn flake cookies are soft baked.
