Butter milk - better than milk?

By products we get from milk are many. Curd, butter,ghee to name a few. But one cheapest drink which everyone can afford to have is butter milk, which is derived from curd. More over, the best summer drink common for all! It also serves as a healthy food drink! So, how many of you are drinking butter milk daily?

I was brought up on a farm. We kept 6 to 8 milk cows, separated the milk, sold the cream and fed the skim milk to the hogs. That wouldn't be possible today. Imagine feeding buckets of skim milk to the hogs! My mother taught me that there were 3 kinds of milk that we drink, sweet whole milk (just as it came from the cow), buttermilk (the liquid left in the churn after the butter had formed and been removed), and clabber milk. Clabber milk is what is labeled buttermilk at the grocery milk. It took me years to get over the idea that it was fit only to be fed to the hogs. Real buttermilk from the churn has an entirely different taste and even has minute bits of real butter floating in it.

Buttermilk isn't cheap here in the states. But lots of people love to drink it. It is my Mother's favorite drink besides hot tea. She drinks probably a gallon a week. She said it's a great lifter. She will take it and dunk her cornbread into it. I don't drink much, but I cook with buttermilk lots. We drink lots of sweet milk around here,but use the 2% instead of whole milk. I usually always drink a glass before going to bed at night unless I eat a small bowl of cereal with milk.

I being an indian like you agree totally with you. Butter milk is the best tonic during summer as it quenches thirst and also charges up ones metabolism too. Then there is something called "Sambharam" that is butter milk with spices added to it. I love Sambharam a lot than ordinary butter milk.
