I need a recipe that uses fresh spinach

I bought a big 20 ounce package of fresh baby spinach the other day when my sister was down because she wanted to make a spinach salad, but she never did. I can use some of it is a spinach salad still, but I can't eat it all before it goes bad. Anybody know of any good recipes that call for fresh spinach?

It's really good if you very lightly saute it in olive oil, but not enough to wilt it. Then cover each plate with it, and place rice or pasta on tope of the spinach, and whatever sauces, meats, veggies, etc, you want on top. It's pretty and it tastes great!

We like to sautee it with a couple of cubes of bouillon and have it with pasta. You could also use it in a salad, like you would lettuce. You could make spinach lasagna. You could sautee it and have it in omelets. So many options!

1# tablespoon butter or olive oil
# 1 pound spinach, about 2 bunches, trimmed, torn, cleaned
# 8 ounces mushrooms, cleaned and sliced
# 2 shallots, minced
# 1 clove garlic, minced
# 1/8 teaspoon salt
# dash freshly ground pepper
# 1/4 cup fresh shredded Parmesan cheese, optional
In a large skillet, heat butter or olive oil over medium heat. Add mushrooms and shallots; cook, stirring, until mushrooms are tender. Add the garlic, spinach, salt, and pepper. Continue cooking until spinach is tender. Sprinkle with fresh shredded Parmesan cheese just before serving, if desired
