I have a confession. I have never eaten fried chicken. I like the idea, but I refuse to eat at those supposed "Southern Style" chicken restaurants and the subject of frying my chicken, or pieces of it has never really arisen at home. But this year I want to change all that by cooking some at home. I have been given the most perfect frying recipe but now I would very much appreciate a little something to coat my chicken in. I don't want old Aunt Jemima's family secret recipe. Just good, straightforward coating recipes that this fool Englishman can do at home without leaving the chicken bare and the kitchen walls coated. Your ideas and recipes are all warmly invited.

How could you have never told me that you've never eaten fried chicken before, p1key? As much as I love to fry chicken, as much as we talk, and I don't know that you've never had fried chicken!!! Incredible!
Ok, what I usually do is just throw some flour in a paper sack, add salt, pepper, garlic, whatever spices I like, then throw the chicken in the bag and toss it about in there. In my skillet, or frying pan, as you know it, I put some vegetable oil, or canola, or whatever your preference is, get it really hot, and then add my chicken to it, a piece at a time. Do a test piece first to see if the oil is hot enough. You want a big sizzle. Just touch a corner of a piece in the oil and see if it sizzles big. If it does, put the chicken in. Get it browned and crisp, then turn it over and do it again. Give each side about 8 minutes, depending on the size of the pieces. One store here in town has positively nuclear sized chicken, it's really amazing how big these chickens are! Anyway, when it's done, put it on a plate with paper towels on it to absorb some of the oil. Serve with mashed potatoes and any vegetable you like. It's ultra yummy.
But recently I did it slightly differently. I got some buttermilk. I dipped the chicken in the buttermilk, then in the flour, back into the buttermilk, and back into the flour, then put it in the skillet to fry. It was wonderful, and very coated and crispy.
Try it, p1key. Then you'll see what all the fuss is about, I'm sure you will. But don't go to KFC!! That's gross. Or any of the other so-called fried chicken places either, they're all horrible, in my opinion. There's nothing in this world like home-fried chicken. Especially mine. I wish I could send you some, but I don't think it would work, ya know? I can't wait for you to try this. I want to hear how it was. We'll turn you into a Southerner yet!

Hey, that gives me an idea. Since you're in bed today, why don't you watch Harold and Maude? That's SURE to make you feel better! You'll be out of that bed in no time after watching that! It always, always makes me feel better.
I'm really very scattered today, darlin, as you might have noticed, but I'm trying to keep myself social today, unlike the past several days, when I've been rather hiding out from the world. But that's not healthy if I let it go on too long, so that's why I'm here now. And having someone else to take care of always gets me up and out. Why I just wrote all that I don't know. But I did. Ah well, c'est moi. Blither and blather. But at least I'm up.
Now, go watch Gone With The Wind. And don't say that you frankly don't give a damn. Or tomorrow's another day. Or something about the kindness of strangers. But that wasn't GWTW. That was Streetcar Named Desire, wasn't it? Yup, sure was. I know - it was I've always depended upon the kindness of strangers, that's it! Gotta love that Blanche DuBois. Gotta love that drama, all that good drama....... Don't pay any attention to the woman behind the keyboard. Back away from the keyboard, nova, back away. I think I'm channelling Sparky! Insanity!!!

A little H&M sounds good. Except I have it on video tape and there isn't a player here. However, I must convert it to DVD soon. Or at least get it onto the main computer. GWTW is probably on the net somewhere so I may go hunting. Yes, be social today. Go downtown (I know that you already are) and coffee house or window shop. Whatever you do - Smile.

OK i will give you the Jamaican recipe,
first of all; clean your chicken using vinegar (optional),add your preferred seasonings get half cup of backing flour add a small amount of seasoning to the flour set your pot for frying add enough oil so the chicken will get deep fry. your next step is to cover the chicken with the flour shake off excess flour then add to pot when hot. wait until its fried then you can enjoy. if you need any other homemade recipe you can call me. have great day.

You can coat it with flour with salt and pepper mixed in with it...for a variation I take potato chips....crush them up and put the chicken in a baggie with the chips....then I bake it. It gets a nice coating on it with the extra fat from frying it.

Now,,not chicken but food..there was a documentary on the television,that was all about the sandwich making business..I didnt se eit I was told about it,and they said it was horrendous!!and if you ever bought ready made sandwiches,that you woldnt be buying them now!!!im wondering what we are going to eat soon,as there are programmes about everyhing!..a piece of Battenburg?

I saw it Ruby. I like Alex Thomson usually, but he made a bit of a drawn out deal of this one. Talk about 15 minutes condensed into 60! I was somewhat put off by the hygiene standards in that "factory". However, I've just had a bacon and egg sandwich - two actually. Lovely. Assembled by the fair Mrs P1ke and served to me at the computer as she wished to lock horns with the soaps and she knows how much I enjoy those!! I do have room for a little Battenburg if you have a piece going.

I will be honest about this,I havent a recipe or an idea!..but the coating of cornflakes sounds very tempting.Southeren fried chicken is a bit of a no no as far as im concerned,that is te shop bought stuff,like you im always a little bit wary of `what` the chicken is.Years ago a next door neighbour used to cook her chicken in a very unusual way,she used to fill the pan with lard,melt it,then up end the chicken in the pan and cook it in the deep fat,at half time she would turn it over and cook the other half,the idea is different,and OK,its laden with all the things that are very bad for us,but having said that it always used to smell wonderful.I like those chicks you can buy that are stuffed and garlicky,they are so tasty,..but will make do with a ham sandwich !

My husband likes it simple. dipped in milk,salt,pepper, then dredged through flour that has soul seasoning and little more pepper and salt then deep fried.(some use a egg in their milk dipping mix but we prefer not to most times,)It just depends on what you prefer you can use a egg in the milk mix it does give it a different flavor but not by much.

the best friend chicken is done the old fashion way. toss some season on it, coat it in old fashion flour, and fry it. thats it. let it cook on each side for about five minutes. then flip it over a few times and there you go. good moist yummy friend chicken

It's not a recipie but you can try a mixture called shake and bake. They probably do not sell that in England but you can get it on the internet i'm sure. It is very simple to use and delicious on chicken. you can also roll your chicken pieces in crushed cornflakes or potato chips there are many things you can use. Check the internet for recipies. I made shake and bake chicken last weekend it was delicious.

LOL...I'm sorry but Shake and Bake is such a normal part of life here that "imported shake and bake" sounds so hilarious to me! I mean, hey, we love it but it's not exactly a delicacy!

I'm a day late and a dollar short. lol
Well I just take corn meal, add season salt, dip the chicken in and egg and milk mixture, then dip it in the corn meal and fry it. Pretty simple...

u don't know what u have been missing. there is nothing better than fried chicken in my book. i just wash the pieces after i have soaked the chicken in salt water for ahile. salt & peeper them, roll them in flour & put it in a skillet of hot grease. turn heat down when chicken is brown on both sides, put a lid on the skillet so it' wil cook good in the center. simple as that. good luck, happy eating.

I will either coat mine in bread crumbs, or crush up corn flakes. Just dip the chicken in a well-beaten egg and roll in the coating before putting it in the oil. You may add spices to the egg as desired.

Frying Chicken is not an easy task and takes a bit of practice Pikey. But plain old flour seasoned will with salt and lots of black fresh ground pepper, poceeded by an egg bath is all you need to fry up chicken. Just make sure you have a good deep frying pan, and that your oil is very hot. Crisp it on all sides then turn the heat down to med. Do not turn your chicken to often, you can make much of it :))))
Good luck hon and do not be disappointed if your first try is not quite up to standards. It took me several ruined chickens before I got the the hang and I grew up watching women fry chicken.

Thank you Angel I must admit to some nerves about it all. But I NEED to learn how to do it. I can't go through my whole life and not at least try it once! You know, I think that I should take another year and slowly work my way around my myLot friends' kitchens and learn to cook US style. Oh and Aussie style before Goodie pops up and blasts me. XX

I am not a good cook but my I love the way my Mom fried a chicken, no coating..Just fried it right away! It's always our favorite...She will also cook it in "adobo" style, that's how we describe it in our Country...marinate it using with mix soy sauce, lime,garlic and brush it with the chicken and cook it together with the left over of those sauce!
My husband loves to grill it with hot sauce..Taste good too!

Sorry p1ke my darling but ever since my brother in law and I had really severe sun burn combined with sun stroke we swore off of fried chicken and that extends to recipes - so I have no recipes etc and I have never broken that solemn oath and tried fried chicken! xxx

DON'T take the skin off! Put plain ol' self-rising flour into a gallon-size ziploc bag. Sprinkle each piece of chicken in a bit of salt and/or pepper, then put a couple pieces at a time in the bag and shake it around a little. Make sure each piece is well coated with flour, not too caked up or too bare, then add to the pan of oil. Afterwards, just throw the bag (full of the leftover used flour) away. Very easy, and not too messy. If it was any harder, I'd never make it!

Hmm...can't say my chicken coating is the simplest but I actually make my own homemade breadcrumbs and add in some Italian herbs (dried in packages) to it and use that as my chicken coating when I am frying.
I use this recipe called Oven Fried Chicken if I don't want to go through the frying process and it makes the chicken taste so deliciously moist! Now if you are going for traditional southern fried chicken I can't be of any help there.
But you can just buy some Italian bread crumbs at your grocery store.

Okay, you talked me into giving you my coating recipe. Are you happy? j/k
I put 1 cup of flower in a ziplock bag, sprinkle about 2 teaspoons of seasonging salt in and 1/2 teaspoon of pepper. Then I add the chicken in ( ine piece at a time) and shake it. Then the chicken is fried in a cast iron skillet on medium to low heat. Cooking chicken throughly is very important. So, I fry it for about 30 minutes then take it out and put it in baking pan and bake it for about 30 minutes at 300 degrees.
It's good, give it a try.
I buy the whole chicken, cut up already and make sure I cut it's little tail off!
