Need some new ways to make the veggies.

I need some new ways to make vegetables. I usually steam them or just boil in some water, microwave them, all very boring. Does any one have some ideas on what I can do with say, carrots, peas or corn besides the ways I listed above. Thanks!

Here's something that works for me. Bundle up a big bunch of frozen and fresh diced veggies with two chicken thighs in alluminum foil and grill on the indoor grill machine. Be sure the foil is wrapped tightly. Add spices that you love! I get so many rave reviews from this dish. And it's so easy. Perfect for summer days when I don't feel like turning on the stove.

You can mix them with pasta...I always throw some veggies in with whatever pasta I am making. Recently we made corn with green & red peppers & onions (all frozen & in the microwave!) and then added a little butter & salt & pepper - delicious!! You could also try mixing them with mashed potatoes & tuna (i know, it sounds weird, but actually pretty tasty!) For carrots you could cook them & glaze with butter and brown sugar if you like the taste of candied yams... You could also try adding some seasoning - garlic, chili powder, etc. etc. I also recently learned that carrots taste good on a sandwich, lol. I cooked some for my daughter & then put them on the sandwich I was eating. I pretty much just add veggies to whatever i am making & it usually turns out pretty good. hope that gives you some ideas!

Have you tasted raw carrots? They are so sweet, crunchy and delicious? Peas taken from their pods can be quite lovely to eat raw as well. I think that you will have to cook corn before you eat it though. I love to eat fresh salad like carrot, cucumber, spring onion, beetroot, peas and some vinegary cream on top of it. My friend likes to make salads look attractive using pattern and color to great effect. Good luck.

Try oven roasting some tomatoes capsicums, mushroom, spanish onion eggplant with olive oil and salt and pepper over the top. It is also really good with olives and garlic tossed around in there too.

I make a dish for my guy with peas, carrots, and corn. I take mashed potatoes, mix in the cooked vegetables, and seasoned ground beef, ham, or shredded chicken together. It's a good, warm, filling meal that's a one-bowl wonder. Shepherd's pie usually includes the three veggies you mention, so that could be an option for you. I like to add them to curries with chunks of potatoes, chickpeas, broccoli, whatever leftovers I've got in the fridge. It's savory and spicy and really tasty. Good luck. The only thing out of those I can eat plain is the corn, so I understand wanting to find other ways to cook them!
