What is your "SPECIALTY" in cooking?

I love to eat! Cooking should be also a thing for someone who loves foods. I go for Japanese, American, Italian, Chinese, Thai and Filipino Foods. I'm soon to open my own little restaurant near my pad. My specialties are local foods but giving it a different approach in cooking and putting new ingredients to create a better result. How about you? What's your specialty?
