Having leftover Manicotti tonight

I made some 3 cheese filled Manicotti for dinner the other night. I had some cheese mixture leftover after filling up the pan, so I did a smaller pan with some more Manicotti in it. I am going to pop it in the oven for dinner tonight and serve it with some Pillsbury Cresent rolls. Have you ever made Manicotti before? What's for dinner at your house tonight?

I've only made manicotti once before. It turned out pretty good though. I think tonight we are going to have steak fajitas. we were going to have them last night but i forgot and put a crock pot dinner in the crock pot in the morning. so we are going to have the fajitas tonight. unless my husband decides he wants something else when he gets home.

I mixed up a 15 ounce container of Ricotta, 1 cup of mozzarella cheese, 1 /2 cup of parmasean cheese with 1 egg. I put it into uncooked shells using a spoon. I was going to use a plastic bag to pipe it in, but the bag broke on me.
The sauce was 2 cans of tomatoes, 1 can of tomato paste, 1/2 an onion, 1/2 pound hot sausage, garlic, and basil. I simmered it while I was doing the shells.
I put about half the sauce in the bottom of a baking dish. Placed the stuffed noodles on top of the sauce. Poured about 1 cup of boiling water in and then spooned the rest of the sauce on the top. I cooked it covered at 350 for about an hour. Sprinkle the top with shredded cheese and pop it back in to melt the cheese.
