My zuchinnis are growing like weeds suddeenly. I want to make some zuchinni bread. Have you ever made it? Have you ever eaten any? Do you have a recipe and or link for this? Thanks all. HAPPY POSTINGS FROM GRANDPA BOB !!~

I have made zuchinni bread, but don't know where the recipe is at the moment. I have made zucchini pie though. Use your apple pie recipe and instead of apples use sliced zuchhini. It is delicious!

I have made zuchinni bread before, I don't have a recipe handy but it won't be hard to find one. My uncle just sent me a recipe for zuchinni pie, he said its good, I haven't tried it yet. I do know when I made my zuchinni bread I liked to peel the zuchinni, some people don't peel them. I do because sometimes the skins can be tough. Here is the recipe for the pie. Zucchini pie 1 cup Bisquick or flour 3 cups shredded zucchini [leave skin on]1 grated onion 2 small cloves garlic crushed 4 eggs, beaten well 1/2 cup fresh grated Parmesan cheese 1/2 cup cheddar cheese 1/2 cup salad oil 3/4 cup fresh parsley, chopped [ I use the dry parsley]1 teaspoon salt 1 teaspoon pepper, mix above ingredients well, Pour into a well-greased 9 inch pie pan. Bake at 350 degrees for 45 to 50 minutes. Remove when the top is golden brown.

It looks like you have enough bread recipes so I'll just say zucchini bread is delicious. My mom has made it for years and I used to love eating the batter (I thought it was even better than the finished product) :-) Since it only uses the skin, here's a recipe to use the rest of the zucchini (since it calls for peeled zucchini) ZUCCHINI MOCK APPLE PIE 1 pie crust, unbaked (can be left out to make a "crisp" instead of pie) 5 c. sliced zucchini, peeled and remove seeds 1/2 c. sugar 1 tsp. cinnamon 1/4 c. real lemon juice 2/3 c. water CRUMB TOPPING: 1 c. flour 1/2 c. brown sugar 6 tbsp. non-hydrogenated margarine 1/4 tsp. salt Bring to boil zucchini, sugar, cinnamon, lemon juice, and water; simmer until soft. Pour into an unbaked pie shell; pat crumb topping over mock apples and bake at 325 degrees for 25 minutes.

Sorry that I don't have a recipe to help you out. The time I had zuchinni bread I was so surprised to find out what it was. A lady that lived across the street from us at the time baked some and give us some, she was from Germany so I am not sure if it was made the same way it is made here or not but I would think so.

I don't like zucchini bread. But I love fried zucchini, and I love slicing it up with yellow summer squash, carrots and onions and saute-ing it altogether in butter and eating it that way or taking that mix and baking it for awhile to get a more roasted flavor. I wish I had zucchini growing here. Enjoy!

Zucchini Bread Recipe courtesy Paula Deen Show: Paula's Home Cooking Episode: Weekend House Guest 3 1/4 cups all-purpose flour 1 1/2 teaspoons salt 1 teaspoon ground nutmeg 2 teaspoons baking soda 1 teaspoon ground cinnamon 3 cups sugar 1 cup vegetable oil 4 eggs, beaten 1/3 cup water 2 cups grated zucchini 1 teaspoon lemon juice 1 cup chopped walnuts or pecans Preheat oven to 350 degrees F. In a large bowl, combine flour, salt, nutmeg, baking soda, cinnamon and sugar. In a separate bowl, combine oil, eggs, water, zucchini and lemon juice. Mix wet ingredients into dry, add nuts and fold in. Bake in 2 standard loaf pans, sprayed with nonstick spray, for 1 hour, or until a tester comes out clean. Alternately, bake in 5 mini loaf pans for about 45 minutes. Here is another one i came across: August 25, 2008 Zucchini-Cornmeal Spoonbread Be sure to thoroughly drain the shredded zucchini so the spoonbread is creamy, not watery. Serve it with grilled meats or fish. 3 cups shredded zucchini (about 3 medium zucchini) 3 eggs 1 cup sour cream 1 cup grated cheddar cheese 1/2 cup chopped onion 1/2 cup melted butter or vegetable oil 1/4 teaspoon salt 1 1/2 cups cornmeal 1. Heat oven to 400°F. Spray 1 1/2-quart gratin or baking dish with cooking spray. Place zucchini in large strainer set over bowl; let stand 10 minutes. Press or squeeze zucchini to remove excess liquid. 2. Whisk eggs in large bowl until blended. Stir in sour cream, cheese, onion, butter and salt until combined. Stir in zucchini and cornmeal until blended. Pour into gratin dish. 3. Bake 25 minutes or until edges are golden brown and knife inserted in center comes out clean. 8 servings PER SERVING: 355 calories, 24.5 g total fat (14.5 g saturated fat), 10 g protein, 24.5 g carbohydrate, 145 mg cholesterol, 275 mg sodium, 3 g fiber

You have gotten a lot of zuchunni bread recipes-very yummy! I also make zuchini fries-cut them up like french fries cover them with some olive oil and spices (i usually use a mrs dash seasonings and cook them for 1 hour at 450 degrees. They are fantastic.

I wish I could help you with this one, but I don't eat zuchinnis. I know you can freeze most veggies. Can you freeze them if you end up with too many so they won't go bad?

try this: * 2 (1 ounce) squares unsweetened chocolate * 3 eggs * 2 cups white sugar * 1 cup vegetable oil * 2 cups grated zucchini * 1 teaspoon vanilla extract * 2 cups all-purpose flour * 1 teaspoon baking soda * 1 teaspoon salt * 1 teaspoon ground cinnamon * 3/4 cup semisweet chocolate chips * add to recipe box Add to Recipe Box My folders: * add to shopping list Add to Shopping List * add a personal note Add a Personal Note DIRECTIONS 1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans. In a microwave-safe bowl, microwave chocolate until melted. Stir occasionally until chocolate is smooth. 2. In a large bowl, combine eggs, sugar, oil, grated zucchini, vanilla and chocolate; beat well. Stir in the flour baking soda, salt and cinnamon. Fold in the chocolate chips. Pour batter into prepared loaf pans. 3. Bake in preheated oven for 60 to 70 minutes, or until a toothpick inserted into the center of a loaf comes out clean.

Just about any recipe on the net will do but I like to add stuff. I like to put in some ginger and nutmeg, grated carrot, nuts, applesauce in place of 1/2 of the margarine/butter called for. This gives it a little of the spice cake taste and is really tasty.

zucchini bread 3 eggs 1 cup oil 2 cups grated zucchini[drain in colander , leave skin on 3 tsp. vanilla 3 cups.flour [plain] 1/2 tsp. salt 1/4 tsp. baking powder 3 tsp. cinnamon 1/2 cup chopped nuts beat eggs till light & foamy. add oil, sugar,grated zucchini& vanilla.mix lighty but well. add flour, salt,soda,cinnamon& baking powder sifted togethjer.mix well, add nuts.pour into 2 greased loaf pans. bake at 325degrees for an hour.enjoy. p.s. i had more nuts, some cocanut, sometimes bananas or datesjust whatever i think will be good in it.

no,i haven't,sometimes i like a bread that made by someone in the street way.it is very cheap,and so delicious,made by black rice that make them to black.one made by corn that made it looks like golden.i usually buy two kinds.and eat them at the same.so delicious that i have eat.do you eat the bread that which they made?wheat?ilove China,
