potatoe salad

We love potatoe salad and I just made some, it made me wonder how many make this with the red skined potatoes and leave the skins on? I take most of them off. Also do you mash your potatoes? I do some of them. I also never make the same salad, potatoes are so forgiving and so I add many different things. Today I added dill, horseradish, sour cream and mayo. That is along with onion, pickle and mustard.
We really like it spiced up. Let me know how you make yours, you can give me some new ideas.

I make a German Potato Salad with red skinned potatoes - I prefer to use the small new potatoes for it. I usually steam the potatoes instead of boiling as they stay firmer. For this recipe, I fry several slices of bacon and set aside. I then add sugar and vinegar, each in amounts approximately equal to the amount of bacon grease in the skillet and then mix a couple of tablespoons of flour with water to use as a thickening. I crumble the bacon into the potatoes and usually add some green onions and salt and pepper, then pour the dressing over the top and fold in with the potatoes. You can serve either hot or cold.

I peel all the skins off the potaos. I boil them and them cut them up into small pieces I do not mash them. The only things I put in my potato salad are miracle whip, potatos, egg, oinions, sweet pickles, and salt and pepper. No one in my family likes mustard or anything spicy so that potato salad works for us.

no, i do not mash my potatoes. in fact i like them to cool when i make my salad. i don't like hot potatoes for salad. i always put boiled eggs, onion,olives, mayo, a little mustard, salt. pepper & sugar. i love good potato salad.

I remove only the really thick skins. I add mayo, mustard, and pickle like you. To that I have added the following combos- hard boiled eggs and tuna, Adobo seasoning, eggs, and a bit of salsa, hot pepper rings(chopped)and bacon bits sometimes with egg, sour cream and garlic powder. I don't mash but cook enough so that when mixing some will mash just by the mixing.
