foot tapping music is not a specific genre..it just implies a song that has a beat or tempo that a majority of ppl find compelling or "catchy" enough to tap their foot along with.

I'd say probably bluegrass. ;) I tend to tap my foot when I play an instrument (except for piano, for some odd reason I tap my hands). When my foot gets tapping really fast, I'm probably playing bluegrass.
