Help: Perfect recipe for my carbonara

hi guys, I need help with cooking carbonara... What is the best recipe you can suggest? I'm a bit wether if I should or should not use cream... Any suggestions? Thanks!

It really depends on the pasta that you want to use. There are basically two variations on the "carbonara" recipe: one using onion and parmesan cheese, and one using garlic and pecorino cheese ( (Note: NO cream is used in either: the creaminess comes from the eggs themselves. And there is NO place for other ingredients.It's a traditional "poor" dish and, what is more, cream is also not an ingredient in traditional Roman dishes. 4 eggs 1/4 c. butter 1/2 lb. bacon, cut up 1 lb. fettuccine or spaghetti 1 c. grated Parmesan or Romano cheese 1/4 c. snipped parsley Pepper

Yup I've read that cream is just a variation for the american dish but I still use it because I'm scared that I may get sick with the eggs. Can you please tell me what is the proper way to use the egg? Thank you...

Right ersmommy, your is a perfect carbanara recept!! All the other variation are not "carbonara" are another thing, may be they taste good but is it not "carbonara". Carbonara is done like you wrote, I prefere the "pecorino" version but I find good also the other... Carbonara is a typical recept from Rome, my wife is from Rome and she does it like that!! Nun

Hi majestry. You can use milk instead of cream. It tastes more or less the same. My favourite carbonara recipe is Chicken Carbonara. With chicken, cheese, egg, milk, brocolli, garlic. If you don't want to get sick with eggs, you can use just 1 or 2 egg instead of 4, depending on how big the serving is. Good luck :)
