I don't understand thieves

I don't get why thieves even try to hide the merchandise they are taking. I work at a circle k so seeing theft is an everyday occurrence for me. I mean I see so much of it that I don't even have to look at the customers anymore to know what they are stealing and how much. So why do they even hide it? Its easier for me to just look at it then write it down as theft. The rules say I am not allowed to fight, confront, stop, or chase any thieves or beer runners. Which leads me to my main question (and this was bugging me all night lol) + WHY DO BEER RUNNERS RUN WITH BEER? I have so many funny stories about failed beer runs and I've only been working there a month and a half... maybe I will post some in my next discussion lol.
