What do you make with your ButterNut Squash?

Well that is the fancy name for it. We here in the country call it a potato pumpkin or a potato pumpkin squash. One of our dear church members gave us a HUGE potato pumpkin squash this weekend. I cooked it and then mushed it up a bit and put two cups in a bag and froze them. I ended up having 11 bags of potato pumpkin. We make pumpkin pie out of it and I am going to see how a sweet potato casserole using potato pumpkin instead of sweet potatoes taste. What other ways have you used our potato pumpkins? I love squash...we used to have it fresh from the garden when I was a kid living at my Dad's. I don't have it alot anymore but when I do I just bake it in the oven with butter and cinnamon. It's really great and now you've got me thinking about it LOL **AT PEACE WITHIN** ~~STAND STRONG IN YOUR BELIEFS~~

Butternut squash is great in soup! You can cook it and add it to nearly any kind of soup but I like it in a soup with some chicken bouillon, nutmeg, cinnamon, and a cut up pear. When it's all cooked, put it in the blender till smooth and add some asparagus or broccoli or even some potatoes and carrots. Yummy!
