My families favorite is a chicken and rice casserole. All you need to do is to boil some boneless/skinless chicken till it's done. While this is boiling mix a large can of Cream of Mushroom soup and a large can of Cream of Chicken soup. Add "instant" rice to make it as thick as you'd like. I often use one of those little packages of rice that is flavored like the mushroom flavored. Once the chicken is done just chop it into bite size pieces and mix that in. Put it in the over till it's all hot (about 20 min at 350 degrees). There you have it...don't forget the biscuits. lol

Here are a few good ones from cooks.com. They are all pretty simple to make to. I love making casseroles for dinner. Shipwreck casserole Ingredients: * salt and pepper * paprika * 1 cup chopped onion * 3 medium potatoes sliced * 1 1/4 pounds lean ground beef * 1/2 cup uncooked long grain rice * 1 cup chopped carrots * 1 cup chopped celery * 1 can tomato soup * 1 cup boiling water Preparation: Butter a 2 1/2 quart casserole. Sprinkling each layer with salt, pepper, and paprika, layer the casserole with the onions, potatoes, ground beef, rice, carrots, and celery. Combine condensed soup with the boiling water and pour over casserole. Bake at 300° for 3 hours. Shipwreck casserole serves 4. Biscuit Casserole Ingredients: * 1 lb. lean ground beef * 1 [16 oz.] can pork and beans * 3/4 cup Kraft barbecue sauce * 2 tbs. brown sugar * 1 tsp. minced onion * 1 can Hungry Jack biscuits * 1 cup shredded Cheddar cheese Preparation: In a skillet or Dutch oven, brown ground beef; drain well. Stir in pork and beans, barbecue sauce, brown sugar, and minced onion; heat until bubbly. Pour into 2 1/2 quart casserole. Cut biscuits in half to form 20 half circles. Place cut side down around edge of casserole and sprinkle shredded cheese over the top. Bake at 375° for 25 to 30 minutes, or until biscuits are golden brown. Taco Casserole Ingredients: * 1 1/2 pounds lean ground beef * 1 teaspoon chili powder * 1 teaspoon dried leaf oregano * 1/2 cup taco sauce * 1 can (8 ounces) tomato sauce * 1 teaspoon garlic powder * 1/2 teaspoon salt, or to taste * dash of Tabasco sauce * 6 ounce bag corn chips, slightly crumbled * chopped onion * chopped tomato * grated cheese * chopped lettuce Preparation: Pan Size: 3 quart casserole Oven Temp: 350 Time: 10-15 minutes Brown ground beef; mix in the taco sauce, tomato sauce, chili powder, garlic salt, oregano, Tabasco sauce. Simmer 10 minutes. Put half on bottom of a 3-quart casserole. Top with about half of the crumbled chips. Add remaining ground beef mixture, some chopped tomato, onion, chopped lettuce, and grated cheese (use 1 cup or more). Put remaining corn chips on top. Bake at 350° for 12 minutes, or until hot and cheese is melted. Beef Upside-Down Pie Ingredients: * 1 1/2 cups all-purpose flour * 1 tablespoon baking powder * 1 teaspoon salt, divided * 1 teaspoon paprika * 1 teaspoon celery salt * 1/4 teaspoon ground pepper * 3 tablespoons shortening, divided * 3/4 cup milk * 1 to 2 tablespoons vegetable oil * 1 pound lean ground beef * 1/4 cup sliced onion * 1 can condensed tomato soup or 1 can tomatoes (14.5 ounces) Preparation: Sift together dry ingredients using 1/2 teaspoon of salt. Cut in 3 tablespoons of shortening. Add milk; mix well. Melt oil in skillet; add onions. Cook ground beef and onions until onions are tender; add soup or tomatoes, 1/2 teaspoon salt. Heat to a boil. Cover with biscuit dough and bake at 450° for 25 minutes. Turn upside down on platter to serve. Beef Pie serves 4. Hearty Beef and Spaghetti Pie Ingredients: * 6 ounces of uncooked spaghetti * 2 eggs, lightly beaten * 1/4 cup grated Parmesan cheese * 1 pound lean ground beef * 1 small onion, chopped * 8 ounces sliced mushrooms * 1 jar (approximately 16 ounces) spaghetti sauce * 1 can (11 to 15 ounces) whole kernel corn, drained * 1 green bell pepper, cut in rings * 1 cup shredded mozzarella cheese Preparation: Cook spaghetti as package directs; drain and rinse with cool water. Combine spaghetti, eggs, and Parmesan; toss lightly; place in a greased 9-inch square baking dish or deep-dish pie plate. Press over the bottom and up sides of pan to form a "crust." In a large skillet over medium heat, brown ground beef with onion and mushrooms; drain. Stir in spaghetti sauce and corn. Spoon beef-sauce mixture over spaghetti "crust." Top with bell pepper and sprinkle with mozzarella cheese. Bake at 350° for 25 minutes. Serves 4 to 6.
