Mushrooms, beans, peas, spinach, tofu and plenty of fruit. There's plenty of protein and iron content in these to really help

There are tons of things you can do. A lot of times I add lentils to pasta, you can make great mexican food using black beans instead of meat, or soy beans. The important thing is spices and sauces. Be creative, if it's horrible then you just know not to make it again. Take thin, soft flat bread stuff the thin bread with chillis, tomatoes, a type of bean (kidney, black, or soy), and rice roll them up. (like a burrito almost) Put all of these in a pan and heat them (through convection or on the stove carefully turning) On top of this little concoction put a sauce made of tomatoes and chilies. Don't blend it completely though, you want it a little chunky. (if you're allowed to eat dairy you can also put cheese on top)

A lot of foods have protein in them. Breads and grains for example usually have a good amount of protein. Nuts also contain a lot of protein. It's pretty difficult for you to not get enough protein in your diet as there is protein in many foods.
