When to say No?

My grandma is in the hospital after having a stroke. She has been there for two weeks and is now starting rehab so that she can go home. She has been very stubborn with her rehab and wants us (the family ) to do for her instead of the nurses helping her. Ex: She will want one of us to come and help her turn because she knows that if she pushes the button for the nurse, they will try and make her do it own her own. We have tried to tell her that she will not be able to leave until she can do all this own her own but she's not listening. When should we as a family step in and tell her its not our job but the rehab center to get her rehabilitated?
