tell me the secret to the best lasagna

When I make lasagna, it seems to be too rich. I like a nice light lasagna with gooey mozzarella on top and a nice light tomato sauce. Which is the best sauce to use and should I make my own sauce? I don't cover it when it's cooking and it gets crispy on top and the mozzarella gets too cooked and looses its gooeyness. My husband like the crispy noodles on the edges but I've always preferred a nice tender lasagna. I just want to make the best lasagna and i just can't figure it out. Any suggestions or great recipes that fit my bill? Thank you

The secret is using lots of cheese and your own favorite sauce. I use to add some garlic powder and black pepper to enrich the taste...

Hey thanks. It just so happens that I am making lasagna at this very moment for a guest who is coming to join us for dinner. I will definitely add more cheese and see the difference and let you know how it turned out and my sauce came out so good this time cuz I made it with a lot less seasonings. I didn't drown it in seasonings. I just did basil and oregano and garlic and s&p. You are right on time and I happened to buy ample cheese this time. Isn't it weird that you sent this right when I was making this? How freaky. Thanks your a blessing.I'll let you know how it turns out.

Well, just wanted to let you know that the lasagna was the best one I made so far. Everyone loved it and the extra cheese went over well. It came out a little runny though because of the extra cheese, but I let it sit to firm up and it was still a little runny but I got the pieces out squarely enough. I put garlic powder and black pepper in it as well.My garlic bread came out a little too crispy, not burnt like usual ha but crispy. It was good though. Next time everything will be PERFECT.

It will definitely taste better if you make your own sauce. As for the tenderness of the lasagna, i usually bake the lasagna for 25 minutes, covered then another 20 minutes uncovered for crispy edges. Try checking out www.allrecipes.com for their best lasagna recipe. hth!
