Homemade Apple Butter

Our Ladies Auxillary group at church is going to take on the task of making homemade apple butter. We have all the equipment (copper kettles, stirrers etc.) But we are having problems finding out exactly how to make it. We can't find a ratio for the amount of sugar needed, The kettle is 65 gallons. Anyone know the ratio on sugar, cinnamon tc.
