Deep frying with Canola Oil - is there a problem?

I make my own tortilla chips and taquitos. I usually just buy the cheapest cooking oil...just never lard. But lately I checked and compared all the varieties out there...and there a quite a few... to get the "healthiset" oil, low in all the fats etc, to deep fry with.
I chose a canola oil. I filled my pot, same as always - did everything the same as I have been doing it for 30 years. But the chips just didn't seem to fry right -they seemed to absorbe more oil that usual and when I fried the taquitos, they too, seemed to absorb the oil to the point that they just didn't even fry right.
I always drain both, and there is alot of hte oil that still drips off, but this time, hardly none. Seemed it stayed on the food items. I am going nuts, checking the temp of the oil, the proper flame(I have gas stove) and making sure I am doing it all right... and still... the oil just seemed to stay on the chips, then suddenly start to burn. And when I'd eat them, they were a bit more greasy and oily than usual.
After alot of effort and all, I cut it down to the only thing I had done different this time over the previous hundreds and hundreds of times, is that I used specifically Canola oil.
Does canola oil not do whatever it oil does to become a good deep fry oil? Can it not handle the high temp of deep frying? Any suggestions?

I used to use peanut oil for that kind of frying, although, in truth I fried things very seldom and that was before the manufacturers got the go-head to use genetically modified peanuts, so now I just don't fry at all. Home made tortilla chips are the best, though, aren't they? Right up with home made potato chips.

I would LOVE to do them every day as that is how great they are and how much I would eat them!! But I know that is not healthy so I treat myself with them from time to time. I know I'd sit and eat the entire 3 dozen tortillas cut into triangles and deep fried in one day!!! They are addicting! SO I do carefully watch how often I make them and then just take like 10 torts and fry only that many instead of the whoele 3 dozen!!!

No, I always use the same brand of Tortillas - not much a variety and they are always there and good anyway. This was my first use of Canola oil...just didn't work very well! I'll go back to the regular vegetable oil...should have known...if it ain't broke, don't fix it! Deep fry and healthy ...isn't that an oxymoron or something like that gramatically? whatever, they apparently don't mix!! Learn something new every day here on MyLot! Thanks!

Try crisco or some other brand of solid shortening . It seems to hold the heat and is more economical. Peanut oil is the best but it's very expensive. I have also used regular vegetable oil. Whatever you do don't mix the different kinds or the heat won't be sufficient and the food will absorb the oil. Hope this help. Have a good night.

I never thought to mix brands but then again, never thought about it either. Sounds rather dangerous for some reason!! I'll just go back to the regular vegetable oil I guess. I can't afford peanut oil! Thanks!

my hubby has a deep fryer and he says that you are supposed to use peanut oil for frying, although it is expensive. that could be why it is not frying right.

Thanks. Yeah, i can't afford peanut oil for this - I was using just plain vegetable oil...
