Marinated foods are free of germs because any harmful microorganisms are killed by the wine and spices used in the marinade,That is why you don't need to refrigerate marinated foods; it is safe to just leave it on the counter with or without cover. WRONG!!!. People often think that wine has thesame sanitizing effects as the sanitary alcohol that they use. Microorganisms will thrive on raw food if left in room temperature, that is why meat are best marinated inside a refrigerator, and then cooked at 170 degrees Farenheight or higher to destroy bacteria that may have gotten into it during the preparation period.
