Chocolate Oatmeal Cookies

I was going to make some oatmeal raisin cookies today, but then I realized my son polished off the rest of the raisins. I decided to make chocolate oatmeal cookies instead. Have you ever started to make cookies and then realized you did not have everything you needed?

My mom did that on the weekend, making chocolate chip cookies. The recipe she was using called for oatmeal, and she had none. Ended up changing recipes mid way. Cookies came out more like little cakes.

Yep. Happened when I went to make peanut butter cookies one time. We had this giant can of JIF. I thought wow this will be good. Went to get the can. Gone, all but empty. So no cookies that day.

I'm the kind of person who makes absolute sure I have everything I need before I start a project. I set out all the ingredients ahead of time, so I'm never stuck in that sort of situation. It's a good thing the only thing you were missing was raisins! Chocolate is always a good substitute. :]
