How do you make chicken soup?

I am making chicken soup. I roasted a whole chicken yesterday and today I boiled the leftovers and strained out the bones and junk. Then I added veggies, salt and pepper, but it seems bland. I haven't done this in years, so I guess I forgot how to do it. What else do you put in chicken soup?

I always add garlic and onions. If you brown the onions first, that will add some extra flavor. Also put in some rosemary, but not too much because it can taste pretty strong. And a bay leaf.

I think it would be bland because of the fact that it was roasted. Why didn't you turn it into fried rice. To have a chicken soup I prefer to used the uncooked chicken because this give the soup flavor.

I roast the chicken and then use the leftovers for soup. I boil it and then use the water for the broth. It usually is good, there's just some seasoning missing this time.

You need a broth so you can create on with a can of chicken broth or for a thicker broth buy a can of cream of mushroom or cream of chicken soup and add it to your chicken soup, also for more starchy soups add some type of noodles preferably and add some spices that will give it more taste than normal salt and pepper, use adobo it is kinda an all spice.

what veggies did u add. i always put tomatoes, onion,celery, can of mixed veggies,egg noodles, curry powder , garlic, oregano, salt, pepper & sugar.

I know this is a discussion about chicken soup, but after reading it, I just had to mention this...
Another good idea for left over roasted chicken is chicken pasta.
I use the twirl noodles, shred the chicken, chunks of cheddar and whatever I seem to be in the mood for that day. A little ranch dressing and I am good to go.
