Meatloaf

I made meatloaf tonight for dinner. I usually make it every couple of weeks or so. I'm looking for some new ways to make it though. I usally put in an egg, bread crumbs, worchestshire sauce, ketchup and some seasonings. If I have an onion, then I'll throw some of that in too. I need some new ideas to spruce it up a bit. Anyone have any ideas?

Well sometimes if I have some red and green peppers I'll dice them up and then add them. I also use honey barbeque sauce instead of ketchup with the soy and worchestshire sauce.

Your welcome .. I use Sweet Baby Rays honey Barbeque sauce and I make sure also to top the top of the meatloaf with it .. It makes a nice glaze.

I make mine similiar to yours. I put in 2 eggs, bread crumbs, italian seasoning, grated parm cheese, garlic, basil, ketchup, a dab of mustard and a little bit of ranch dressing. The dressing gives it a different zing and really tastes good. I have also made it before with stuffing instead of bread crumbs. It was good that way too.

Try a can of Manwich on the top instead of the ketchup & seasonings. They have different varieties, I use the original and it gives it a different twist!

Meatloaf, yummy! I put an egg, bread crumbs, sauteed onions, garlic and red peppers (diced finely) mustard, worchestshire and about 1/4 cup brown sugar. Topping: Mix mustard and brown sugar together and let bake on for the last 15 minutes. Sweet and tangy, my son calls it my "famous meatloaf."

well, for me, normal meatloaf would be
Ground Beef
Oatmeal
Onions
Salt & Pepper
Carrots
Garlic
Eggs
Ketchup
with Ketchup/Worcestershire sauce/Sugar/Pepper as a topping placed in the last 20min of cooking.
That's the basic meatloaf my mother taught me. But I like to do Teriyaki meatloaf as well. Same thing but remove the ketchup and add some Terriyaki sauce, you can even keep the carrots. ground up the veggies and put it in there so the kids will eat them. hehe
it tastes really good i think, specially if you have some thinkend teriyaki sauce to top it off.

Have you ever tried making it in layers? I put a layer of the meatloaf I've mixed with eggs, oatmeal, etc., then a layer of cheese, another layer of meat and a layer of salsa. After another layer of meat, I put in a layer of sliced boiled eggs, or almost any veggies, or other cheeses, or olives. This can keep going on and on. The layers can be just about anything. I's a great way to use leftovers, especially veggies. The lare never the same twice, and everyone seems to be anxious to see what's hiin there each time!

My daughter discovered this recipe online and it is FABULOUS!! I think it is absolutely the best meatloaf I have ever had. She also added chopped green peppers to the mix that aren't part of the recipe. This makes quite a large loaf. The only onions are part of the picante sauce, so they are hardly noticeable. Any problems you might have with your daughter might be with the olives, so if you make several small loaves instead of one large loaf, your daughter can have her slices from the olive-free loaf.
FIESTA MEATLOAF
2 pounds lean ground beef
2 cups picante sauce, divided (she used mild picante sauce)
1 1/2 cup oats
1 (1 1/4 ounce) package taco seasoning mix
1/2 teaspoon garlic powder
1 cup shredded Cheddar cheese
1 (3.8 ounce) can sliced black olives, drained
1 (4 ounce) can chopped green chiles
Preheat oven to 375 degrees F. Grease a 9 x 5 x 3-inch loaf pan or a 13 x 9 x 2-inch baking pan.
Combine ground beef, 1/2 cup picante sauce, oats, taco seasoning and garlic powder; mix well. Press into prepared baking pan.
Combine remaining 1 1/2 cups picante sauce, cheese, olives and chiles. Mix well. Pour sauce mixture over top. Bake for 30 to 35 minutes or until center is no longer pink. (You can leave out the cheese without any loss in flavor.)
Makes 10 servings.

Some other idea for meatloaf would include:
-using barbecue sauce in lieu of the ketchup and worcestershire sauce
-adding apples
-replacing the bread crumbs with oatmeal
-adding carrots
-adding italian seasoning
-adding turmeric
-using ground chicken or turkey
