Vegetable recipes

I want to eat healthy as much as possible but we have limited vegetable recipes. I hope anyone here will share his/her own vegetable recipes. By the way, my favorite vegetable dish is Pinakbet(squash, okra, string beans, eggplant and coconut milk).
