Hi all.
Well, one thing about goat's milk is that it is naturally "homogenized" (i.e., it has very fine fat globules). It is the closest to human's milk in terms of consistency and nutrient contents. I experienced drinking goat's milk only once or twice. I also tasted an ice cream made from goat's milk when I visited a farm in Iloilo (Visayas, Philippines).
I have also drank carabao's milk on certain occasions. The thing is , it has a high fat content (almost three times as much fat as cow's (cattle's) milk. So, I don't drink that much (actually, I shy away from any type of whole milk or full cream milk as it is high in cholesterol). But because it is high in fat, carabao's milk is most ideal for making processed dairy products like cheese, pastillas, and ice cream.
How about you, have you tried drinking any of these two types of milk or tasted any of the products derived from them?

Yes, that is an old practice and even nowadays in Nueva Ecija and other provinces. They pour carabao's milk on rice at breakfast.
While carabao's milk is high in fat, it is considered "healthy". Research shows that there are more amount of conjugated linoleic acid (with anti-cancer properties) in buffalo's milk.

I haven't tried any carabao and goat milk.
I know they are sometimes made into kesong puti (white cheddar).
I tasted once that kesong puti and it does taste good.
Have a nice day..
