Give Me Your Sausage Recipes and Tips!

Today I learned how to make sausages in class. For our final, we need to find a good sausage recipe, make it, and have the class agree that it is the best sausage ever.
I am vegan and so I have no sausage recipes.
We are making 100% ground pork sausages and they are only 15% fat (as opposed to the often 50% fat used when sausages are made with misc. extra pork parts). Due to the lower fat content more spice will need to be added if your sausage is normally fatty, so if you make a high fat content sausage just tell me and I will adjust the spices.
This is for a meat science class, but we are allowed to put anything in the sausage, including alcohol. We just can't put anything other than pork meat because the meat is provided to us.

Ingredients for Sausages (garlic) With Tomatoes And Potatoes
4 garlic sausages
6 tomatoes, sliced
3 potatoes, peeled, sliced very thin
1/3 cup water
Seasonings to taste
Instructions
Put all ingredients in a stew pan.
Cover.
Cook slowly for about 20 minutes.
Then serve.

Wait a minute... you can put tomatoes and potatoes into sausage? Or are you buying the sausages at the store and then just cooking them.
We can't add anything to the outside of the sausage. But we can add anything we want to the inside (provided that it is edible). We will be cooking on a mesquite I think. Maybe on an electric grill though.
