School carnival bake sale

I got roped into making 2 cakes for the bake sale that is going on at my son's school Carnival on Friday. I have to make them and have them over to the school by 7pm tomorrow night. Each class was required to have so many cakes. No one else wanted to do them so I got 2 to make. I am making 2 Swedish Pineapple cakes with cream cheese frosting. Those are easy to make and taste yummy. Do you ever make items for bake sales? What do you end up making?

I have not made anything for a bake sale yet. I don't think my daughters school has had one. They have these new nutrition guidlines. So they sent out a fundraiser catalog instead. Didn't work out so well in my opinion.

It has been so long since my kids were little i do not remember baking at all..

Oh the joy of bake sales! My mom got roped into making several cakes when we would have a church bake sale. She was the preacher's wife, so people felt OK about backing out at the last minute and having her made the cakes instead. Boy did she hate that. As for school bake sales, I helped. She said I was old enough to help. Even if I didn't want to, lol.

I am not really a baker, but I have made a chocolate fudge cake for church once. My mother bakes really good cakes, everytime there is a bake sale at her church or a dinner, she always gets nominated to make her sock it to me cake. Everyone seems to really like that cake. She always gets raves over it.
Your cake sounds delicious as well, I like the taste of pineapple in cakes. I have a friend who bakes a pineapple coconut cake every Thanksgiving, I make sure I always drop by just to get a piece.
