A very basic vegetable beef stew:
Cubed beef, browned in a skillet
Beef bouillon or broth
1 small to medium onion, chopped
3 carrots, sliced
3 medium potatoes, cubed
small can of tomato sauce
Cook the meat, carrots, potatoes and onion in the broth, adding water when necessary. Add salt, pepper, tomato sauce and spices as preferred. I like to use garlic and oregano in mine. It's best if it simmers a half hour or so after it's done.

i take my beef &roll it in flour, salt &pepper & let it brown in a small amount of oil. when it's browned good i add potatoes, carrots,can of tomatoes & engish peas, onion. turn it down on low & let it simmer till meat is fork tender.stir pretty ofen so it want stick.

Cut your beef into bite size cubes or buy tewing beef already cut up. Put some olive oit into a frying pan, when oil is hot add beef. Sprinkle with a little flour.
Brown on all sides
Remove from frying pan to a plate
Scrape up brown bits in pan
Add onions, celery, carrots (and potatoes if you wish)
simmer for 2 to three minutes
Add vegetable or beef stock made from boullion cubes or bought in container
Add back beef
Simmer on low heat until done
Add cutup tomatoes, zucchini and peas if you wish
cover and simmer briefly
If not thick enough make a paste with some flour and water
Stir in paste until stew thikens
Simmer for another minute
Serve

There is none simpler then this. I use less meat nowadays and add more vegies. Brown meat and onion ,add what ever other vegies you have on hand or wish to use up. Add water and beef stock cube simmer for half an hour add tomato sauce ,a little worstershire sauce ,potatoes if adding to make a one pot meal. Cook until meat is as soft as you like it, thicken with your favourite packet sauce mix then dish up and enjoy.
