Do you like eating white cheese? pastillas? carabao milk products?

Oh well as I have said, been to my province last weekend and my province boast of carabao milk's products like Pastillas de leche, white cheese, choco milk to name a few. My favorite carabao milk product is white cheese and pastillas. Our pastillas is very good, it is made up of the carabao milk and some sugar. It is rolled and put in a white paper, it is so sweet and so creamy.
White cheese on the other hand is a little bit sour, the white cheese bought from us is good but I prefer more my grand mother's white cheese, she knows to make and it really is delicious (makes me wish that we have no feud ha ha) Well she passed on the recipe to me but hers is still better. This is how she makes it, carabao's milk, boiled and the while is hot still pour some vinegar and some salt, the milk will form and thus making it the white cheese ( I am salivating now from this treat)

I like eating pastillas de leche and yema.. I have also tasted the white cheese but I have no idea about the choco milk. :) What do add up to that milk to make it choco, it is chocolate powder? ^___^

I suppose you are from Bulacan or Nueva Ecija, am I right?
Have you heard of the Philippine Carabao Center? Its main office is located in the Science City of Muñoz, Nueva Ecija. They are promoting village-based dairy enterprise utilizing (obviously) buffalo's milk. There are already close to one thousand farmers in Nueva Ecija alone benefiting from the dairy buffalos that were loaned out to them.
They process pastillas, cheese, choco-milk, lacto-juice, ice cream, candy bars, and other products - all from buffalo's milk.
What you described is called "acid-coagulated" cheese. That's right, vinegar (acetic acid) is a common milk coagulant. But the best-tasting cheese is made from milk coagulated by rennet (an extract rich in enzyme "rennin" from the true stomach of a calf or mature buffalo or cattle). White cheese is a soft cheese that is consumed readily or does not need to be ripened (or aged). Sometimes, you can put "garlic" ("queso de ajo") or pineapple ("queso de piña") in white cheese to make it more flavourful.
In case you're wondering, I used to make different varieties of cheese in my college days at UPLB (I took dairy technology in my undergraduate studies), that's why I know these stuff. Heheh.

one thing yes I am from Nueva Ecija, another one yes I am familiar with Phil Carabao Center as I studied high school in CLSU (though I prefer the one from my hometown which is Talavera) ah so you took up Food Tech in UPLB? I am from UPLB too but did not finish my course, which by the way if Food Tech too. entered UPLB with a promising degree on Food Technology but ended up having a 3 diploma on home eco (home econanay that is)

So you're from Talavera. There is this "DVF Gatas ng Kalabaw" owned by Danny Fausto. I'm sure you are familiar with it.
No, I'm not a food tech graduate. Actually, I took up BS in Agriculture but with a major in animal science and specialization in dairy technology. Anyway, I already forgot most of the practical aspects of dairy processing (as I end up doing administrative and management works). I can only remember the theoretical foundations.

I do like ricotta especially. I like all types of cheeses and diary products. I love mozzarella especially on a pizza.

I also like white cheese although I think it's a bit salty but I really like white cheese with hot pandesal. I also like pastillas, the ube pastillas in particular.
I never knew that making white cheese was such as simple and easy as that.

Wow! I love pastillas! I just love it and it is one of my favorite dairy food. My mother used to prepare pastillas for us as kids and she also sells it in our small store. It's really delicious! Maybe I'll do some pastillas tomorrow. I'll ask my mother how to do it, because I have no idea how to. Yummy!

Yeah I am very fond of pastillas, with regards to carabao milk I think I haven't tasted it yet especially the fresh variety. With regards to white cheese, I think its just doesn't meet my taste bud, I don't like the sour taste.

I have always like cheese and all kinds of cheese except for brie cheese which i find it bitter.. haha =D Other than that, all kinds of cheese will be fine for me, and each kind of cheese have their own unique taste to it.. Some are strong, while some are very cheesy type ^_^ hehe
Pastillas and milk products are part of the cheese fmaily too, and thus, i eat them too, though not as much as cheese ^_^

I love the pastillas de leche and other white milk products! I even love just plain carabao milk mix with hot rice and little salt. I remember my childhood days when our neighbor would milk his carabao and would distribute the milk to the neighborhood at a very cheap price per bottle. But those were the days...there were no more carabaos because all the field have been converted to subdivisions.
I never really liked the taste of white cheese. It's just like eating a salted and and sour milk. But I tasted a very delicious white cheese which I bought from a shop near the Rustans Supermarket. I can't remember anymore the name of the shop but it tasted so different and so delicious that I was always longing to buy that same kind of white cheese again. However, that place have been renovated and converted to Glorietta Mall and the shop was not there anymore.

I love white cheese or "kesong puti", wrapped in banana leaves with a nice string (from banana pulp)... I can't remember the last time I was able to eat one, maybe a year ago in los banos laguna. Wow! Miss it!
When we go to landmark, we always find time to eat at "via mare" and one of my favorite sandwich they have their is the "pandesal with kesong puti"
With this post, i guess i'll ask my partner to find me "kesong puti" tomorrow, i know there's a food stall in a nearby wet market that sells that..

yes.. i love pastillas, those you can buy at Goldilocks Bakeshop.. but my mom told me to take those in moderation since dad has a history of Diabetes.. as we all know, diseases can pass from one generation to another.. i am afraid of getting one so i limit myself now from eating too much sweets.. yay!

Guys/Gals,
White cheese is not "sour" as some of you believed it to be. Actually, it can taste bland to many because it is not ripened. It is just a coagulated fresh milk. If you use vinegar as a coagulant, it only coagulates the milk protein (casein) but it does not add to the flavour of the curd that is produced. Now, if you taste the whey (the liquid part left after coagulating the milk), it is the one that could taste sour because naturally it has acetic acid in it. But as far as the "white cheese" that is produced by the acid-coagulation process, it is not sour.
Sorry pehpot if I sound redundant but I can't help clarifying some misconceptions of our friends about white cheese.

I know that brand I have seen that one in megamall, basement part I think. I have not tried white cheese but I eat pastillas and it is sweet, nice dessert after eating, but you must be careful if you have a history if diabetes, pastillas is deadly for those

I don't think I'm familiar with pastilla or the milk products you mentioned. I'm always up to trying new things, so if I ever had the opportunity I would try them. I guess it is just a matter of finding a place that makes that kind of food and beverages.

no, i have never had it but it sounds good. ilove cheese of most any kind. better quit feuding w/your grandmother. they are so special &i miss mine so much. have a good sunday.
