This year in my girls' class room, they are going to have a italian feast for Thanks giving meal. Parents need to cook some Italian recipes on that day. I have no clue what to cook on that day and I don't know any italian recipes. Suggestions please for cooking some vegetarian italian recipe.

You could make a vegetarian lasagna, or spaghetti with sauce , eggplant parmasan is good. You can do baked ziti, which I am eating right now, no meat is required. I have run out of ideas, but any Italian recipe can be made without meat, I guess as long as you make something with red sauce it would be good.

How about stir fried vegetables or something made with summer squash. I think you can get away with making a green salad with Italian vinaigrette dressing.

When my children were in grammar school, they had these feasts each year. And, it would be for a different country. But, they always had a list of meals even with the recipes. Each child would choose what they wanted to make and then the Mother made it and took it to the school. I still have the recipes of my kids from years ago. They were run off on the old machines where the ink was purple and it fades over the years. Ours are hardly readable now. Here are a couple links where you may find a recipe: http://italianfood.about.com/od/holidaymenus/tp/aa102305.htm http://italian.betterrecipes.com/

The most obvious that comes to mind would be pizza. But here is a recipe for something a little diferent: I think these are so fun and educational for the kids: Cranberry Biscotti (Italian twice baked cookies) 1/2 C margarine 3/4 C sugar 1/3 C water 2 1/4 C flour 1 1/2 tsp baking powder 1/4 tsp salt 3/4 C dried cranberries 2/3 C whole almonds Cream margarine and sugar. Beat in the water, Cointreau, baking powder, and salt. Then add the flour and finally the cranberries and nuts. On a greased baking sheet shape the dough into a loaf 3/4 inch high and 3 inches wide. Bake in a 325F oven for 35 minutes. Let cool for 5 to 10 minutes, then remove loaf from baking sheet and slice the loaf into 1/2 inch slices. Place slices on their bottom edge on cookie sheet, leaving a space between slices. Return to oven for 10 minutes or until the slices are just starting to turn golden. Cool and store in air tight container. Good Luck

Hello, when we talk about italian food, the first thing all the people get in mind is pasta. But if you're going to use noodles instead of italian pasta, the result will be not so good ;) A traditional and well known vegetarian italian recipe is the "melanzane alla parmigiana", in english should be parmesan eggplants. Is a good taste dish, but need a quite long preparation. I guess you can find the recipe online, also if i checked a few right now and the english recipes you can find about this dish are not exactly like the italian original recipes. Anyway is not a big problem, coz also the parmesan and the mozzarella you can find there probably are not exactly like the original ones ;) If you need to carry the food from home to the place where the meal is, then is better you prepare something that is usually eated cold. Pasta and parmisan eggplants should be eated hot. Something interesting could be the "insalata di riso" (Italian rice salad). Is something that usually is eated cold, ideal to be carried from home. This kind of recipe is also easy to find on the net. Anyway keep in mind that to prepare something with the true italian taste, the first important thing is use the extra virgin olive oil. If you need more info, or you want i send you the link to some "trustable" italian recipe, feel free to PM me. happy myLotting
