In a "Dinner Rut".. Can someone help with..

With some new ideas for dinner/supper? For example last night I mad chicken cutlet, with green beans in a tomato sauce, and baked potato. Night before I made lasagne; then the night before we had seafood. I am running out of ideas . Does anyone have any suggestions, it's not very easy when it come to meal planning for those of us that do this each day. Please send some suggestions! Thanks in advance!

Well, I think I'm making baked stuffed acorn squash for dinner tonight. I've already got the ground beef out and defrosted, and it's a pretty simple recipe for a busy day. How about meatloaf and mashed potatoes? Tuna casserole? Or... do what I did for a while - assign each person in your family one day to plan the menu!

OMG That sounds delicious... can you tell me how to make the stuffed baked acorn squash, I have never heard of it. I think meatloaf will suffice, these people don't like my tuna casserole.. LOL

It's so incredibly easy, nancie. Allow half an acorn squash per person. Cut the squash in half lengthwise (from the stem to the point, not across the middle). Scoop out the seeds and the threads to leave a hollow in the middle of each half. Sprinkle with salt and pepper and maybe rub a little butter on the cut flesh, then put the halves face down on a foiled cookie sheet. Bake them in the oven (about 350) for about 40 minutes - you have to use your judgment there. The flesh should be soft but not mushy. While they're baking, mix up a batch of meatloaf and put it in the fridge. When the squash is cooked, let it cool enough that you can handle it without burning yourself, then pack meatloaf into the hollow in each acorn half, mounding it up nice and high. (I usually just make big meatballs out of the meatloaf mixture and plop it into the acorn squash). Put it back in the oven at 350 and bake for about 20-25 minutes, until the meat is cooked all the way through. That's it!
