In our household, we eat chicken a lot - fired, stewed, grilled ,and steamed. But my favorite is fried chicken. For several years, I have experimented with different types of herbs and spices to copy the KFC taste. Then I mixed different flour in search of the perfect crunch, although quite unsuccessful. How do you make your fried chicken crunchy? Is it the type of flour or frying oil that will make it crunchier?

Try adding a teaspoon of baking soda to your flour mixture an fry the chicken pieces just half way deep fried with oil. Make sure too that the oil is very hot before you put the chicken in.
