Has anyone tried making fires out of something other than potatoes? My favorite are butternut squash oven fries. Cut butternut squash into french fry shapes, brush them with olive oil and bake at 375 til done. Delicious. What about you? Tried anything different?

I often make chips out of potato peelings, instead of the whole potato. You need to peel it a little thicker and obviously wash it thoroughly. I brush them with olive oil, sprinkle over a little cumin and curry powder, then cook them until they're crispy. Most kinds of root vegetable work quite well too, I've found. I've tried it with parsnip, carrot and sweet potato in the same manner as your butternut squash.

Wow. I never thought of it and I love this idea. A great way to use something that you might otherwise throw out. Thanks for the idea.

What an interesting concept. French fries from butternut squash. I will have to give it a try. This may be a way to get my grandson to eat another vegetable. I do make French fries from sweet potatoes. They are very good. I have also made fried parsnips but hadn't thought to make them into French fries. I have some parsnips and I believe I'll try them as French fris in the oven to cut down of the oil. They get nice and sweet when fried.

Using parsnips sounds like a great idea. I'm going to give that one a try. Have you tried mock mashed potatoes with your Grandson? Boil cauliflower florets until tender. Put them in a food processor with some fat free half and half and process until mixture is the consistency of mashed potatoes. Add butter, salt and pepper to taste. My Grandkids inhale them and when I cooked my Grandson's birthday dinner, he requested Grandma's mashed potatoes.

That sounds great and healthy at the same time. Thank you for sharing it. I like sweet potato fries. The technique for baking is the same as yours for the squash...just cut, baste with olive oil and bake. They are very good, especially with ranch dressing. I'll try out the squash ones now too. Thanks again.

I love french fries! I had never ever heard of butternut squash oven fries before. Those sound pretty healthy and good tasting! I love fried foods so much that we have 2 deep fryers. Sometimes I cut up zucchini and make zucchini fries - those are really yummy! I know it is bad for you but fried food tastes so good! Have a great day and happy myLotting!!!
