Sponge Candy Recipe
1 C. sugar, granulated or brown
1 C. dark corn syrup
1 T. vanilla
1 T. baking soda
2 large bars Hershey chocolate, melted
In a large, heavy saucepan, combine sugar, corn syrup and vanilla. Bring to boil over medium heat, stirring until sugar dissolves. Cook, without stirring, to 290-300° F., or until mixture separates into hard brittle threads when dropped into cold water. Remove from heat. Quickly stir in baking soda. Mix well.
Turn into a deep, buttered 9 x 13-inch pan. Do not spread. Cool, then break into pieces. Dip into melted chocolate, if desired.

I have a couple of easy recipes I use each year.
I like Pennsylvania Dutch Potato Candy. It is quick and easy.
2lbs confectioners sugar
1 c mashed potatoes (may use more to stiffen enough to roll)
peanut butter
Mix c. sugar and mashed potatoes together until stiff enough to form a ball. (At first it will bee more like liquid as you add sugar to potatoes.)
Once formed in a ball, wrap in plastic and refridgerate for a few hours until firm.
Roll out in rectangle (like jelly roll).
Spread with peanut butter.
Roll like a jelly roll and wrap in plastic, refridgerate about 1 hour
slice in 1/2" thick pieces.
Place in air tight container layer with wax paper.
Enjoy!
