Cooking with Potato Chips?

I have seen recipes in the past that simulate the crunchiness of fried chicken by coating the chicken in potato chips and baking it. I was wondering if something similar would work with fish? And if so, how about using salt and vinegar chips? (Although I'm not entirely sure US salt and vinegar chips use malt vinegar like the crisps in the UK?) Is this a crazy idea?

I haven't cooked with potato chips in this way. I have only crunched them on the top of casseroles. I would imagine that if it worked for chicken it would work for fish though. Salt and vinegar sounds good actually!

I have heard of cooking with potato chips, but I have never tried it - I just can't imagine the taste of it...
