non slimy eggplant?

I had dinner with one on my mom's friends on Saturday and part of the dinner that she made was a breaded eggplant thing. Now sometimes I don't like eggplant because of the way it was prepared (slimy) and sometimes it's OK, but this was really good. She sliced it and flattened it and then put it in a breading that included bread crumbs and garlic and parmesan cheese and then fried it in olive oil. Yum.

That's a typical middle Italian way of preparing eggplant - I grew up on eggplant done that way. My grandmother learned early to make double the amount she was planning on for dinner because my brother and I would snitch pieces off the platter all day long. We did the same thing with blanched broccoli that she was making for broccoli and cheese!

Thanks for the BR! Your post last month inspired me - I hadn't made eggplant in years, but had on in the fridge (I keep buying them when they're on sale, thinking I'll make eggplant parmesan, and just don't get around to it)... so. I grabbed my son and taught him how to press, dredge and bread eggplant for Parmesan. Everyone loved it - including the next-door neighbors. I know that because my daughter liked it so much, she brought a plate over for them to try. My kids have all decided that they LOVE eggplant now.

I have not done much with egg plant but maybe she had it sweat before she covered it with the coating. My understanding of what make the egg plant slimy is allowing it absorb too much juices when cooked.

I think the salt draws out some of the moisture then pressing it gets more out. Thats my understanding any way.

Eggplant should never be slimy. That is a sign that the person who cooked it is a bad cook. I love eggplant, and I can't remember ever having badly prepared eggplant. Of course, I usually stick to preparing it myself, so that may explain my luck with eggplant dishes.

That sounds like eggplant parmesan. Good stuff. I like having that over pasta and a red sauce.

It's similar except she didn't put any sauce on it. It was good though.
