How do you do your "lechon paksiw?"

Some of us love lechon (roasted pig or piglet) for noche buena, new year's eve and other special occasions, specially if it has lemon grasses that are stuffed in it. They add to the flavor and smell of the roast.
When there's leftover lechon, I usually make lechon paksiw. I slice the meat, and add lots of garlic, onions, lemon grass, liver spread, a little sugar and seasoning and vinegar. I add a little water to the mixture and let it boil. I could use Mang Tomas sauce instead of liver spread.
How about you, how do you do your lechon paksiw?

My dear, I am very, very health conscious so I do not eat pork and therefore I do not eat lechong baboy! While others would die for lechong baboy I don't even touch when serve in any party. But I also do lechong paksiw but I use lechong manok instead. I have the same recipe as yours and truly it taste so great and delightful and much, much healthier than lechong baboy.

Hello maam.
I agree that eating pork like daily is really unhealthy. But I don't eat pork or lechon that often, only during occasions, because it's quite expensive.
I eat fish and vegetables every day.
