My Cookies are Flat

I just made my chocolate chip cookies today for Christmas. Once again, they are flat as pancakes. I don't know what I'm doing wrong. I make the same Nestle Tollhouse recipe every year. Most of the times they turn out flat. Does anyone have any tips on how to prevent them from flattening out?

I guess you could put them in cupcake cups. Just kidding, usually when things go flat it's do to oven temp or old leavening agents. Since you are using the recipe not a store bought mix, I'd check my baking powder or soda which ever you use. Though I don't think soda goes bad unless it got wet. I've never had this problem. lot's of others but not this one so these ideas are all I can offer. Blessings

I had an idea of how you could use yur flat cookies. While they are still warm boll them around a chocolate candy, or just roll them into a tube and fill with frosting, jelly or custard. Never waste a chocolate anything. That's my thought to live by this morning.

Hi there Shar19 I am no expert on making cookies but have you tried putting the dough in the fridge for about an hour before cutting them and cooking them? Also the less the dough is touched (especially by warm hands) the better they will turn out, so run your hands under the cold tap/faucet before making the cookie dough! Hope this helps!!

I actually did another batch and put them in the fridge and that seemed to help. Thanks for your tips.

How fresh is your baking soda? That can make a difference. If you aren't sure how fresh it is you can test it with a bit of vinegar. Sprinkle some baking soda in a bit of vinegar. If it's fresh it will foam up. To test baking powder use water.

You know that's something I never even considered. Thanks for the tip.

This is one of those weird coincidences. I would never have known this a week ago but apparently some kinds of flour tend to do this. What you are supposed to do is to either make your cookies with bread flour, or put the dough in the fridge for a few hours before you bake them. Good luck getting this to work, I have never cared either way but I just like to eat the cookies :).

Funny you mention that because a friend of mine just told me to use bleached flour. I always bought the unbleached kind.

maybe you forgot to put baking powder? or too much water? it makes the mixture too watery? or you over mixed it? just follow the direction and the temperature check it too..make sure it has enough heat...because if it is not the right temp like it is not that hot ...it will flatten out. i've tried it last time when i immediately put the cookies inside the oven and i was not able to preheat it right away the outcome was flat cookies!

I put everything that it called for. It's very possible that I'm over mixing.

Are you dropping the dough ball-shaped onto the cookie sheet? Are you making the balls in the recommended size? Either of those two might be contributing to the flat shape.

Yes, I making them the right size. I think it might be the flour or the baking soda causing the problem.

i, too, always have this problem when i make cookies, which isn't very often. they always taste great, they just look flat and don't ever rise up very well. other people's cookies are always big and "poofy" and i always wonder what i am doing wrong. i have also heard the overmixing theory. maybe it is that. thanks for the topic because maybe i will get some good tips as well! good luck! :)

I have also had this problem in the past. I now use half butter and half margarine when I am making the cookies. This has made my recipe perfect, but I'm not sure that it would work for every recipe. Good luck with your baking!
